I heard through the force that my readers desired more delicious posts rather than that other non-edible blithering. Today, I have for you a recipe written on notepad paper in a terrible pencil scrawl. I know I got the recipe online, but I have no idea from where. Judging by the Shamrock doodle on it, I made these last year for St. Patrick’s Day. When I made these I halved the recipe so that my husband and I would still be able to fit into our pants. They turned out fine for me, however, I can’t guarantee that things will turn out well if you go and fiddle with the original recipe yourself.
Mint Chocolate Cookies Recipe
2 sticks of butter (1 cup)
1 3/4 cups of granulated sugar
2 eggs large
3/4 tsp peppermint extract (you could probably use fresh mint if you are willing to experiment)
2 cups of all purpose flour
1 cup unsweetened cocoa powder
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
Preheat oven to 350F
I recommend lining your cookie sheet with a silicone baking mat because the cookies won’t stick and you won’t have to clean the pan. Trust me. Silicone baking products will change your cooking life for the better.
Beat together butter and sugar (a mixer is better, but I mixed this batch by hand with fine results). Add egg and the extract. Add flour, cocoa powder, baking powder, baking soda and salt. Form 1 inch balls and placed two inches apart.
Bake 13 minutes.
Option: You can add some chocolate chips, but these do get thin so don’t get crazy.
Option: Dip the cookies in chocolate candy coating.
Option: Make ice cream sandwiches
Do you like those evil, mint Girl Scout cookies? These aren’t exactly like that, but they can satisfy the craving without the need for you to go bankrupt or to be disappointed at how small they make them now!

Right? We got Samoas (caramel delights in some places) the other day and they were so tiny! Better for my health, but so much worse on the wallet. Not really worth it anymore, except to support the org. Since I do love the Thin Mints, I will have to try these too!

These will be closer to thin mints if dipped in chocolate. They aren’t a copy cat recipe, but they are easy to make and have nice mint note anyway 🙂

Yeah, I don’t want copy cats, just something chocolate and mint I could make to take their place when I can’t afford to blow $5 on tiny little cookies.

Oh, then these are the ticket! They are especially nice paired with mint chocolate chip ice cream. But…uh…not chocolate peanut butter ice cream. Just…no.
